The working farm “Il Castello” has ancient origins, in fact our family has lived in this landscape from six generations, always trying to improve the products of our earth, like –for example- olive oil. Indeed, we reap and process the olives of our olive grove, which is placed next to the working farm.

Several years ago we planted a walnut plantation to use it both for its fruits and for its wood, and a truffle plantation in order to pick truffles which enrich our cookery.


Our flock, made up of Suffolk-raced sheep selected by the A.P.A. (P.S.A.-Provincial stockbreeder Association) of Perugia, is the pride of our farm; this race comes from England and originates interbreeding Norfolk sheep with Southdown rams. The result are extra-sized sheep which are reared mainly for their lean and much digestible meat. It is a race characterized by good prolificness and maternal instinct;; as a matter of fact, in Italy it is used as a race to interbreed with the local ones in order to improve the meat production. The Suffolk ones distinguish themselves by their quiet behaviour when grazing and their thick fleece which, besides producing an excellent wool, protects them from rain, frost and snow.



In our farm we rear even some Tibetan sheep, as well as the courtyard animals like rabbits and hens.
